Lamb Mansaf by Aheda's Kitchen by Aheda Amro and Abbey Rich

Abbey Rich

Made with love. From Aheda's Kitchen comes her recipe for Mansaf, a spiced slow-cooked lamb with rice and a tangy jameed yoghurt sauce—an integral and celebratory piece of Palestinian cuisine.

This cherished recipe, passed down through generations, has been lovingly brought to life by Aheda’s friend, artist Abbey Rich. Abbey captures the warmth of dining at Aheda’s table—a place where, no matter the time, a meal is always waiting.

As a tribute to Aheda’s food philosophy, Abbey has included Aheda's hands symbolising how cooking with one's hands creates connection and intention.

The artist has also incorporated an Arabic phrase meaning ‘made with love,’ reminding us that every meal made is an expression of love.

Aheda's Kitchen

Chef
 Aheda's Kitchen Food Truck
Born in Halhul, Palestine, Aheda has been immersed in the world of cooking for as long as she can remember. She honed her skills as a chef in her homeland, where she also ran her own successful catering business. Many of her cherished recipes are lovingly passed down from her grandmother and mother, reflecting the vibrant flavours and traditions of Palestinian cuisine. Now based in Brunswick, Aheda shares her passion for food with the community through her food truck, which opens every Saturday at 15 Hope Street. Her approach to cooking is guided by two essential principles. The first, a treasured aspect of her culture, is to cook with your hands—a practice that connects the chef with their ingredients. And the second is to cook with love, a belief that every meal is an expression of love for another.   Photo credit - Sam Biddle
