Simon Paredes uses coloured pencils to craft striking, simplified forms on paper. His work is characterised by a keen focus on domestic objects and nostalgic elements of retro pop culture, blending everyday familiarity with a bold artistic vision. Simon is represented by Arts Project Australia, a gallery and studio that supports neurodivergent artists and artists living with intellectual disabilities. He joined APA in 2014 and has exhibited in numerous group exhibitions, including Wangaratta Art Gallery and Arts Centre Melbourne, and his work is held in private collections across Australia.

Classic Bologna Panino by Stefanino Panino & Simon Paredes

This poster is made in collaboration with Arts Project Australia, a Melbourne-based studio and gallery that supports artists with intellectual disabilities.

Artist Simon Paredes’ bold and precise illustration captures the nostalgic charm of Melbourne’s beloved sandwich shop, Stefanino Panino — which sells out daily to dedicated regulars.

In his artwork made with colour pencil on black rag paper, Simon portrays Stefanino's most popular dish, the Bologna Panino—a classic sandwich made exceptional by using the highest quality ingredients. 

The green olives, dutifully lined up, mirror the meticulous care Stef Condello puts into the city’s best sandwiches; everything in its perfect place. The artist has even included the signature text found on the deli's sandwich paper; the Italian phrase “il tuo cibo viaggia sicuro,” meaning “your food travels safely.
