Phoebe Tunis is a Greek-Australian chef who grew up in the vibrant coastal town of Byron Bay. Her childhood was steeped in the rich flavours of her heritage, inspiring her passion for cooking. A transformative trip to Ikaria deepened her connection to the land and its culinary traditions, igniting her dream to share these experiences. Upon returning, Phoebe founded Kouzina Byron Bay, a restaurant in Byron Bay that showcases the simplicity of Greek cuisine, emphasising fresh, local ingredients and a warm, inviting atmosphere. Dolmades by Kouzina Byron Bay by Phoebe Hara Tunis and Lisa Carpagnano

French artist Lisa Carpagnano captures Kouzina’s recipe for dolmades (a Greek specialty of stuffed vine leaves) as a cinematic journey across multiple scenes—ingredient gathering, coastal mountains, and taverna tables with chequered cloths and wooden chairs. 

 

The artist chose a late-summer-inspired colour palette to evoke the warmth of the Mediterranean, merging seamlessly with Byron Bay’s coast where Kouzina is based.

For Kouzina's chef-owner Phoebe Tunis, who grew up making dolmades with her family, the dish represents more than food; it embodies place and heritage.
