 Chef's at Africola
Duncan Welgemoed & Lauren Southwell
South African by birth, Duncan was head chef at The Goose at Britwell Salome, Watlington, Oxford when it was awarded a Michelin star in 2005 and has also worked at Le Manoir aux Quat'Saisons. In early 2010, he arrived in South Australia and opened Africola in 2014. Over the years, Duncan has become Adelaide's (un)official spirit animal - mythical beast, troublemaker, conversation starter. His latest restaurant, Africola, tells a story close to his heart.  When Duncan isn’t in the kitchen at Africola or spending time with his family, he’s writing his new book, heading up a healthy school lunch program in South Australia and cooking events around Australia and overseas.   Duncan's right hand Lauren Southwell is head chef at Africola. Lauren has been leading the kitchens of Africola for five years, having previously worked at Cumulus Inc and Rumi in Melbourne.

Africola's Riverland Yabbie Boil by Duncan Welgemoed & Max Blackmore

Oozing with cool, this poster by graphic artist Max Blackmore harnesses the wild energy of Africola and their Riverland Yabbie Boil.

From chefs Duncan Welgemoed and Lauren Southwell, this recipe was one of Africola's most memorable celebratory staff meals with long tables layered with mounds of yabbie boil, and magnums of wine dotted in between.

A seafood boil is a masterclass in the art of gathering and feeding a crowd, and a personification of Africola itself — full of verve, intensity, and unbridled energy.

Max has heroed the iconic yabbie among the colourful flavours of seafood boil and a classic gingham tablecloth waiting to be splattered with sauce.
