Under the sails of the Sydney Opera House, Peter Gilmore has spent 10 years redefining Australian dining at Bennelong. For this artwork, he shares his recipe for Marron with finger lime, cultured cream, ume, and buckwheat pikelets — a dish that ties Australia’s unique produce to his own childhood memory of after-school pikelets.
But dining at Bennelong is about more than what’s on the plate — it’s the theatre of the space, the views, and the feeling of being there. That's why artist Gemma Leslie painted the scene from a diner’s point of view: its maroon interiors and dramatic vistas through the windows of the Opera House with shimmering Sydney waters beyond and the iconic Harbour Bridge in the distance.
