Part of our Easter Feast, these speedy yoghurt flatbreads are your last-minute saviour. Forgot the bread? With just two ingredients, you can whip them up in minutes. Even better, pass the rolling pin around and get your guests involved. Warm bread, made together, straight to the table.

Easy Speedy Yoghurt Flatbread

Ingredients

  • 2 cups selfraising flour
  • 1½ cups Greek yoghurt
  • Pinch of salt

Method

Step 1.
In a large bowl, combine the flour, yoghurt and salt. Mix until it comes together into a soft, sticky dough. Avoid kneading, as this can make the bread tough.
Step 2.
Turn the dough out onto a lightly floured surface and divide into 6 equal portions, coating each portion lightly in flour.
Step 3.
Using a rolling pin, gently roll each ball into a flat circle, approx 20cm wide.
Step 4.
Heat a cast iron pan or heavy-based frying pan over high heat. Cook each flatbread without oil for about 1 minute, or until bubbles form and the underside is lightly charred. Flip and cook for another minute on the other side.
Step 5.
Serve right away or wrap in clean tea towel to keep warm!
