Mushroom & Cheddar Toastie

Ingredients

  • 400g mushrooms of your choice
  • Sprig of thyme
  • 1/2 onion, finely diced
  • 2 garlic cloves, minced
  • 80ml olive oil
  • 4 slices sourdough bread
  • 40g butter
  • 200-300g cheddar cheese
  • Salt & pepper

Method

Step 1.
Heat a pan over medium heat with a tablespoon of butter and a glug of olive oil. Sauté the onions until translucent, then add the garlic and cook until fragrant.
Step 2.
Add the mushrooms with salt and pepper. Fry for a couple of minutes, then add a splash of water and a sprig of thyme. Cook until tender.
Step 3.
Butter the outside of the sourdough slices. On the unbuttered side, layer the mushrooms and crumble the cheddar on top.
Step 4.
Heat a pan or sandwich press with a little olive oil. Cook the toastie until golden brown on both sides.
Step 5.
Sprinkle with salt, slice, and enjoy!
