Mushroom & Cheddar Toastie

Ingredients
- - 400g mushrooms of your choice
- - Sprig of thyme
- - 1/2 onion, finely diced
- - 2 garlic cloves, minced
- - 80ml olive oil
- - 4 slices sourdough bread
- - 40g butter
- - 200-300g cheddar cheese
- - Salt & pepper
Steps
- Heat a pan over medium heat with a tablespoon of butter and a glug of olive oil. Sauté the onions until translucent, then add the garlic and cook until fragrant.
- Add the mushrooms with salt and pepper. Fry for a couple of minutes, then add a splash of water and a sprig of thyme. Cook until tender.
- Butter the outside of the sourdough slices. On the unbuttered side, layer the mushrooms and crumble the cheddar on top.
- Heat a pan or sandwich press with a little olive oil. Cook the toastie until golden brown on both sides.
- Sprinkle with salt, slice, and enjoy!
