Mushroom & Cheddar Toastie

Mushroom & Cheddar Toastie

Ingredients

  • - 400g mushrooms of your choice
  • - Sprig of thyme
  • - 1/2 onion, finely diced
  • - 2 garlic cloves, minced
  • - 80ml olive oil
  • - 4 slices sourdough bread
  • - 40g butter
  • - 200-300g cheddar cheese
  • - Salt & pepper

Steps

  1. Heat a pan over medium heat with a tablespoon of butter and a glug of olive oil. Sauté the onions until translucent, then add the garlic and cook until fragrant.
  2. Add the mushrooms with salt and pepper. Fry for a couple of minutes, then add a splash of water and a sprig of thyme. Cook until tender.
  3. Butter the outside of the sourdough slices. On the unbuttered side, layer the mushrooms and crumble the cheddar on top.
  4. Heat a pan or sandwich press with a little olive oil. Cook the toastie until golden brown on both sides.
  5. Sprinkle with salt, slice, and enjoy!
