Kay-Lene is the Head Chef at TONKA and CODA, situated just off Melbourne’s infamous Flinders Lane. Kay-Lene is a Pastry Chef extroadinaire and her desserts have affirmed both TONKA and CODA as a ‘must go’ restaurants in Melbourne. Kay-Lene’s recipe is an ode to her mother, who is based in Singapore and who is a “Carrot Cake Connoisseur” – the Halwa Carrot Cake may not look like a traditional western carrot cake, but its flavours are unmistakable, much like its wow factor!
