Watermelon with Whipped Feta and Finger Lime

Ingredients

  • - 1 watermelon, cut into circles using a cooking cutter - or cubes using a knife!
  • - 200g feta cheese
  • - 50ml thickened cream (or Greek yogurt for a thicker texture)
  • - A handful of fresh basil leaves
  • - Olive oil or honey (optional, for drizzling)
  • - Pinch of sea salt (optional)
  • - Pepper

Steps

  1. Cut the watermelon into circles or cubes, arrange them on a large serving platter.
  2. In a food processor or mixing bowl with an electric hand mixer, combine the feta cheese and thickened cream (or Greek yogurt). Blend or whisk until smooth and creamy, creating a whipped consistency. You can add a drizzle of olive oil or a touch of honey to sweeten it if desired.
  3. Spoon generous amounts of the whipped feta over the watermelon circles/cubes.
  4. Cut the finger limes in half and gently squeeze the pulp out, releasing the citrusy 'caviar'. Scatter the feta with the finger lime.
  5. Garnish with a few fresh basil leaves, salt and pepper. Oh and a drizzle of olive oil if you desire. Serve immediately!
