Sardine Toasts with Tomato

A zippy little lunch inspired by our limited-edition Sardine prints.
This is our rendition of a 'pan con tomate' topped with silvery sardines and a generous sprinkling of herbs.
Sardine Toasts with Tomato


  • - 1 tin sardines
  • - Bread of your liking (we use a baguette sliced in half)
  • - 2-4 ripe tomatoes
  • - 1 tsp dried oregano
  • - 1 tbsp olive oil
  • - 1 clove garlic, peeled, cut in half
  • - 1/2 lemon
  • - Chives (or other soft herbs like parsley, dill or basil)
  • - Salt & pepper


  1. Using a box grater, grate your tomatoes into a bowl, discarding the skin that is left at the end. Briefly strain the tomato pulp for a few seconds and return to a bowl. Dress the tomato with olive oil, oregano, salt and pepper. Mix to combine.
  2. Toast your bread to your liking. Cut a clove of garlic in half and rub the cut side over the warm bread. Top with spoonfuls of the tomato, sardines, chives and finish with a squeeze of lemon.
