Sardine Toasts with Tomato

This is our rendition of a 'pan con tomate' topped with silvery sardines and a generous sprinkling of herbs.

This is our rendition of a 'pan con tomate' topped with silvery sardines and a generous sprinkling of herbs.
Ingredients
- - 1 tin sardines
- - Bread of your liking (we use a baguette sliced in half)
- - 2-4 ripe tomatoes
- - 1 tsp dried oregano
- - 1 tbsp olive oil
- - 1 clove garlic, peeled, cut in half
- - 1/2 lemon
- - Chives (or other soft herbs like parsley, dill or basil)
- - Salt & pepper
Steps
- Using a box grater, grate your tomatoes into a bowl, discarding the skin that is left at the end. Briefly strain the tomato pulp for a few seconds and return to a bowl. Dress the tomato with olive oil, oregano, salt and pepper. Mix to combine.
- Toast your bread to your liking. Cut a clove of garlic in half and rub the cut side over the warm bread. Top with spoonfuls of the tomato, sardines, chives and finish with a squeeze of lemon.
