Grilled Peach and Burrata Salad

Ingredients

  • - 4 ripe peaches
  • - 4 Sprigs Fresh Basil
  • - 2 knots of Burrata Cheese
  • - 1/2 Cup Pecans
  • - Handful of rocket
  • - 2 Tbsp Extra Virgin Olive Oil for grilling, more for drizzling
  • - Balsamic glaze, for drizzling
  • - Honey, for drizzling
  • - Sea Salt
  • - Fresh Ground Black Pepper

Steps

  1. Preheat the grill on a medium heat. Cut two of the peaches in half and two into 8 wedges - remove their pits. Drizzle them with olive oil.
  2. Place the peaches cut side down on the grill. Cook for for 5-8 minutes, until the edges start to bubble and you can smell the caramelising sugars. At 5 minutes, flip one to check. When finished, remove and set aside to cool slightly.
  3. Add rocket to a serving platter or bowl. Add the burrata on top (you can carefully tear this open too to show the creamy centre!)
  4. Add the peaches to the plate and drizzle with extra virgin olive oil, balsamic glaze and honey.
  5. Tear the basil leaves over the top and sprinkle over pecans.
  6. Season with salt and pepper and enjoy!
