Grilled Peach and Burrata Salad

Ingredients
- - 4 ripe peaches
- - 4 Sprigs Fresh Basil
- - 2 knots of Burrata Cheese
- - 1/2 Cup Pecans
- - Handful of rocket
- - 2 Tbsp Extra Virgin Olive Oil for grilling, more for drizzling
- - Balsamic glaze, for drizzling
- - Honey, for drizzling
- - Sea Salt
- - Fresh Ground Black Pepper
Steps
- Preheat the grill on a medium heat. Cut two of the peaches in half and two into 8 wedges - remove their pits. Drizzle them with olive oil.
- Place the peaches cut side down on the grill. Cook for for 5-8 minutes, until the edges start to bubble and you can smell the caramelising sugars. At 5 minutes, flip one to check. When finished, remove and set aside to cool slightly.
- Add rocket to a serving platter or bowl. Add the burrata on top (you can carefully tear this open too to show the creamy centre!)
- Add the peaches to the plate and drizzle with extra virgin olive oil, balsamic glaze and honey.
- Tear the basil leaves over the top and sprinkle over pecans.
- Season with salt and pepper and enjoy!
